You might not be aware of this, but June 28 is National Ceviche Day – yes, there's a holiday for everything, even raw seafood cooked by lime juice.

To celebrate, Cuba Libre Restaurant & Rum Bar is offering a unique variation of the popular seafood dish, from Monday, June 25, through Sunday, July 1.

Chef Guillermo Pernot, who won his second James Beard Award for his book ¡Ceviche!: Seafood, Salads and Cocktails with a Latino Twist, came up with the recipe.

The speciality "Ceviche Mixto" will be made with poached lobster tail, shrimp, squid, fresh coconut water, chiles, citrus, Thai basil and cucumber salsa. It will be served with coconut chips and priced at $16.

Both the Atlantic City and Old City Cuba Libre locations will offer the ceviche during dinner.
