Four Thanksgiving leftover recipes from local food bloggers

Thanksgiving is undoubtedly a day for "stuffing" your face with delicious goodness.

Turkey, potatoes, pies. The food list goes on and on.

But for some, the leftovers the next day are even better. And most likely, you will have plenty to work with on Friday.

Sure, there's always the obvious turkey sandwich, but why not give one of these four recipes from local food bloggers a try instead?

Mini Thanksgiving Pot Pies - Vegan Fazool

Between the leftover stuffing, vegetables, potatoes and turkey, you'll have more food than you'll know what to do with. These mini Thanksgiving pot pies from Vegan Fazool give you a way to combine all the leftover goodness into one delicious meal. 

Layer or mix whatever your heart desires. No pie crust? No problem. Food blogger Dawn Carlock suggests covering everything with mashed potatoes and baking to yummy perfection. See her husband's recipe for the pot pies here.

Wine Infused Thanksgiving Leftover Empanadas - I Can Cook That

On her blog, I Can Cook That, local food blogger Kaitlin Lunny shares a recipe that adds a little spice to your Thanksgiving favorites. She credits Azul Argentine Bistro in New York for coming up with a way to use an Argentine red wine called Clos de los Siete, along with some spices, to create a Thanksgiving leftover empanada.

Leftover Squash Smoothie - Beauty is Wellness

Jolene Hart of Beauty is Wellnesswho believes that beauty is built through smart nutrition choices, shares a recipe for a smoothie made from squash on her blog. Using a leftover acorn squash, she makes a smoothie rich in vitamin A, omegas and probiotics with a taste "reminiscent of a slice of creamy pumpkin pie."

Sweet Potato & Bacon Egg Bake - Baker Bettie

Local blogger Baker Bettie shares a recipe that uses your Thanksgiving leftovers for a satisfying Black Friday breakfast egg bake. She suggests cracking some eggs over leftovers – sweet potatoes, in this case – along with cheddar cheese, bacon and rosemary in an oven-proof dish and putting it all under the broiler for a few minutes.
