Jessica Nolen seeks final funding for Little Bird Bakery

Brauhaus Schmitz pastry chef is opening up her own shop

Jessica Nolen (née Vogel, which means "bird" in German"), pastry chef at Brauhaus Schmitz and Whetstone Tavern and wife of owner Jeremy Nolen, is opening up her own bakery and cafe this fall. However, she needs her future patrons' help to get it off the ground.

The Little Bird Bakery & Cafe (get it?) will open at 517 S. Fifth St. (at the former Cookie Confidential locale) in October if all goes according to plan. She'll be serving coffee and other beverages, baked goods and lunch items like soups and sandwiches. She'll also be wholesale baking for Whetstone and Brauhaus.

To that end, Nolen is seeking $15,000 in crowd funding to pay for a setup with Counter Culture Coffee and a big ol' mixer so she can create large batches of goodies quickly. In the two days since she launched her GoFundMe campaign she's raised nearly $3,000. Click here to donate now.
