Healthy at halftime: Pineapple guacamole

This is a great twist on a classic party dip. Avocados are a staple superfood packed with healthy monounsaturated fats. Add some pineapple and it really kicks it up in both flavor and nutrition. There are several choices at your Whole Foods or super market for gluten free chips to round out the dish. 

Pineapple Guacamole

Serves 6

You will need: 

2 ripe avocados

1/2 small red onion fine diced

1 teaspoon of lime juice

1/4 cup of small diced pineapple

1 tsp fresh parsley fine diced

1 tsp cilantro chopped

Salt to taste

Pinch crushed red pepper flake. 

Open and remove seed from avocados.  Scoop avocados into mixing bowl.  Add all ingredients and mix with fork until smooth.  This can be made the day before or the day of.  If you make it the day before pour a little bit of lime juice on top and cover tight with plastic wrap.  The acid from the juice will reduce the avocado from turning brown.  If there is browning, simply give the guacamole a good stir before it is served.

Side note: If the avocados are not ripe to touch, place them in paper bag overnight and that will accelerate ripening process.
