Made with roasted walnuts, dark chocolate, coconut flakes, and chia seeds, this delicious snack packs a healthy punch while also satisfying your sweet tooth.

Almond Joy Chia Seed Pudding – 4 servings

Ingredients:
• 2 cups of unsweetened almond milk
• ½ cup of unsweetened coconut flakes
• ¼ cup of unsweetened cocoa powder
• ¼ cup of powdered erythritol
• 1 teaspoon of pure vanilla extract
• 1/3 cup of chia seeds
• 2 tablespoons of crushed roasted almonds
• ¼ cup of (optional) carob chips or dark chocolate chips (non-vegan)

Directions:

  1. Toast raw almonds on a medium-low skillet for 5-10 minutes, then crush in slightly and set aside
  2. Combine ingredients 1 through 6 in a blender, HOWEVER, only use 1/4 cup of coconut flakes, and mix until well combined
  3. Transfer into 4 individual serving bowls, cups (or into 1 large if you prefer not to portion it out) and refrigerate 1-2 hours
  4. Add almonds, remainder of coconut flakes and dark chocolate chips
