Healthy Recipe: Flourless Chocolate Cookies

If you’re looking for a tasty dessert that won’t derail your diet, look no further than this flourless chocolate cookie recipe from Independence LIVE’s weekly healthy cooking class. They’re low in calories, rich in flavor, and can be made in less than 30 minutes.

Flourless Chocolate Cookies – makes approx. 24 cookies

Ingredients:
• 1 cup of confectioners sugar
• ¼ cup of unsweetened cocoa powder
• 1/8 teaspoon of salt
• 2 egg whites
• 1 teaspoon of vanilla
• ½ bittersweet chocolate, chopped

Directions:

  1. Preheat oven to 350 degrees
  2. Line 2 large cookie sheets with parchment paper
  3. Coat paper with cooking spray
  4. Combine ingredients 1 through 3 in medium bowl
  5. Beat egg whites in a large bowl with hand mixer until soft peaks form
  6. Add vanilla
  7. Fold in cocoa powder mixture until combined
  8. Fold in chocolate chips
  9. Drop batter by tablespoons on baking sheet, leaving 2 inches between each cookie
  10. Bake 12-14 minutes, or just until cookies are beginning to crack on the top
  11. Let cool slightly on pan then transfer to wire rack to cool completely
