Greek Yogurt Berry Pancakes – 10 servings

Ingredients:

• 8 ounces of Greek yogurt
• 7 tablespoons of whole grain flour
• 1 teaspoon of baking soda
• 1 teaspoon of cinnamon
• 1 teaspoon of ground flaxseeds
• 2 eggs
• 1 teaspoon of vanilla extract
• Pinch of salt (optional)
• ½ cup of frozen berries

Directions:

  1. Scoop yogurt into a medium bowl, then add flour, baking soda, ground flaxseed, cinnamon; mix until combined.
  2. Whisk eggs and vanilla together in a small bowl, then transfer to yogurt mixture and mix until combined.
  3. Place a skillet or griddle on medium-low heat greased with non-stick spray.
  4. Scoop out 1/4 cup of batter and gently pour on griddle. Add berries directly on top of batter.
  5. Once you see bubbles form, flip pancake and cook for an additional 45-60 sec.
  6. Top with your favorite toppings, Enjoy!
