Healthy Recipe: Lentil Soup with Lime

Lentil Soup with Lime – 12 servings

Ingredients:
• 1 tablespoon of canola (or vegetable) oil
• 1 medium onion, chopped
• 1 lb. of dried lentils, washed and picked over
• 8 cups of cold water
• 1 teaspoon of salt
• ½ teaspoon of black pepper
• 1 teaspoon of dried oregano (or fresh mint), chopped
• 3 bay leaves
• ½ teaspoon of cumin
• 1 can (4 oz.) of mild green chiles, drained and chopped
• 1 chopped red bell pepper
• 1 medium carrot, trimmed, peeled, and diced
• 1/3 cup of lime juice

Directions:

  1. In a large saucepan, pour in the vegetable oil and sauté the onion.
  2. Add lentils, water, salt, black pepper, mint, bay leaves, and cumin, then bring to a boil over moderate heat. Lower heat, cover, and simmer, stirring occasionally, for 30 minutes. Add more water as needed.
  3. Add the green chiles, red pepper, and carrots; simmer 15 more minutes, or until the lentils are very soft.
  4. Before serving, remove and discard bay leaves and stir in the lime juice.
  5. Serve hot and enjoy!
