Pistachio Truffles – makes 10 servings

Ingredients:

• 1 cup of unsalted, shelled pistachios
• 8 pitted medjool dates
• 1 teaspoon of vanilla extract
• Splash of water
• Dash of salt
• ½ cup of semisweet chocolate chips
• ¼ cup of almond milk
• 1 tablespoon of coconut oil

Directions:

  1. Food process pistachios until they are course and ground.
  2. Add dates, vanilla, water, and salt. A dough will begin to form.
  3. Roll into balls and freeze for about 20 minutes.
  4. Melt together chocolate, milk, and oil in a small saucepan.
  5. Once melted, dip the dough balls using a fork and set them on a lined baking sheet. Freeze for another 20-30 minutes and enjoy!
