Healthy Recipe: Strawberry Arugula Salad

Tired of eating the same salad all the time? Change things up with this delicious strawberry arugula salad. This recipe can be served as a starter or an entire meal when complemented with a piece of chicken or salmon!

Strawberry Arugula Salad – makes 4 servings

Salad Ingredients:
• 1 bag of arugula
• 2 cups of spinach (optional)
• 1-2 cups of strawberries
• ½ cup of chopped pecans
• ¼ cup of hemp seeds
• ½ cup goat cheese crumbles
• Sprinkle of parmesan cheese (optional)

Dressing Ingredients:
• 3 tablespoons of olive oil
• 1 tablespoon of balsamic vinaigrette
• 1 teaspoon of garlic powder
• 1 tablespoon of dried basil
• 1 shallot, minced
• 1 tablespoon of honey or maple syrup

Directions:

  1. Add nuts to skillet and toast on low heat until slightly browned (no fat or salt needed).
  2. Clean arugula, spinach and strawberries.
  3. Chop strawberries as desired (cubes or slivers).
  4. Add greens, strawberries, hemp seeds and pecans to large bowl, set aside.
  5. Make dressing: Combine all ingredients in small bowl and whisk until dressing thickens (emulsifies).
  6. Add dressing to salad and mix until combined.
  7. Plate salad and sprinkle evenly with cheeses.
  8. Enjoy!
