Baked Tomatoes – makes 4 servings

Ingredients:

• 2 tomatoes, cut in half
• 1 tablespoon of olive oil
• 1 teaspoon of each: parsley, oregano, and basil
• Salt and black pepper
• Parmesan cheese (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. Place tomato halves in a lightly greased baking dish.
  3. Drizzle oil over tomatoes and sprinkle with seasonings.
  4. Bake for about 20 minutes or until heated thoroughly.
