Apple Pie Chia Pudding

Prep Time: 15 minutes • Cook time: Overnight • Servings: 4

Ingredients:
½ cup chia seeds
3 cups coconut milk
1 teaspoon (more if desired) apple pie spice:
   • 2 tablespoons ground cinnamon
   • 1 teaspoon ground nutmeg
   • ½ teaspoon ground allspice
   • ½ teaspoon ground ginger
1 apple, shredded
2-3 tablespoons maple syrup (optional for sweetness)
½ cup coconut flakes
½ cup chopped walnuts

Directions:

  1. Mix together all the apple pie spice ingredients in a bowl.
  2. To make the chia seed pudding, mix together all the ingredients except the coconut flakes and walnuts. Place in the refrigerator overnight.
  3. To serve, place some of the chia seed pudding in a bowl. Sprinkle with some of the coconut flakes and walnuts. Enjoy!
