Healthy Recipe: Apple Sandwiches

Apple Sandwiches

Prep Time: 5 minutes • Cook time: 30 minutes • Servings: 8

Ingredients:
1 cup rolled oats
2 tablespoons ground flaxseeds
1 teaspoon cinnamon
Dash of salt
1 tablespoon orange juice
2 tablespoons maple syrup
1 teaspoon olive oil
½ teaspoon vanilla extract
¼ cup raisins
4 apples
1 teaspoon lemon juice
1/3 cup creamy natural peanut butter

Directions:

  1. Preheat oven to 300 degrees F.
  2. In a large bowl, mix oats, flaxseeds, cinnamon, and salt. Set aside.
  3. In a small saucepan, mix orange juice, syrup, oil, and vanilla over low heat.
  4. Pour syrup over oats and stir to combine. Spread on a greased baking sheet and bake for 20 minutes, stirring halfway through.
  5. Once granola is cooked, stir in raisins.
  6. Cut apples into ¼” slices width-wise. Brush with lemon juice.
  7. Spread ½ the apple slices with peanut butter and sprinkle with granola. Top with remaining apple slices, pressing down gently.
