California Avocado Toast
Main Ingredients:
1 slice of whole grain bread
½ ripe avocado, lightly mashed
1 tablespoon of onion, diced
Pinch of salt and pepper
Toppings:
1 pan-fried or hard-boiled egg
2 slices of heirloom tomatoes, large and ripe
Directions:
- Toast 1 slice bread and spread with 1/2 ripe, mashed fresh California
Avocado mixed with diced red onion.
- Spray a small nonstick skillet with cooking spray and fry one egg, or
prepare a hard-boiled egg. Place cooked egg onto avocado toast, sprinkle
with salt and pepper if desired.
- Or add 2 slices tomato and sprinkle with salt and pepper if desired.
