If you’re a fan of avocado toast, you’ll love this recipe from Independence LIVE’s weekly healthy cooking class. It makes for a delicious breakfast or light snack, and serves as a great source of potassium, protein, and fiber.

California Avocado Toast

Main Ingredients:
1 slice of whole grain bread
½ ripe avocado, lightly mashed
1 tablespoon of onion, diced
Pinch of salt and pepper

Toppings:
1 pan-fried or hard-boiled egg
2 slices of heirloom tomatoes, large and ripe

Directions:

  1. Toast 1 slice bread and spread with 1/2 ripe, mashed fresh California Avocado mixed with diced red onion.
  2. Spray a small nonstick skillet with cooking spray and fry one egg, or prepare a hard-boiled egg. Place cooked egg onto avocado toast, sprinkle with salt and pepper if desired.
  3. Or add 2 slices tomato and sprinkle with salt and pepper if desired.
