Green Machine Smoothie Muffins – 16 servings

Ingredients:

• 2 cups of all-purpose flour (can sub gluten-free flour)
• ½ cup of sugar
• 2 teaspoons of baking powder
• 1 teaspoon of baking soda
• 1.5 teaspoons of cinnamon
• Dash of salt
• ¼ cup of canola oil
• ¼ cup of almond milk
• ½ cup of diced frozen mango
• 2 bananas, mashed
• ½ cup of spinach
• 2 teaspoons of vanilla extract

Directions:

  1. Preheat oven to 350 degrees F. Line two muffin pans with liners.
  2. Whisk together dry ingredients in a large bowl.
  3. Blend until pureed: bananas, spinach, mango, and milk. Add oil and vanilla and blend until well mixed.
  4. Fold together wet and dry ingredients just until combined.
  5. Fill muffin cups about 3/4 full and bake 20-25 minutes.
