Quick and Easy Middle Eastern Delight – makes 4 servings

Ingredients:
• 1 can of chickpeas
• ½ cup of cherry tomatoes
• 1.5 garlic cloves, minced
• ½ white onion, diced
• 1 box of couscous
• 1 teaspoon of olive oil
• Salt
• Vegetable broth
• 1 teaspoon of curry powder
• ¼ teaspoon of turmeric

Directions:

  1. In a pan, warm oil with garlic and onions until brown.
  2. Add tomatoes, simmer with oil and onions for about 3 minutes; then add can of chick peas.
  3. Boil water or broth on stove, add a touch of salt and oil. Once boiled, cover and simmer.
  4. Add spices to chick peas; toss.
  5. Add couscous to simmered water or broth; and fluff.
  6. Layer couscous, top with chick peas, and enjoy!
