Enjoy a healthy spin on a classic dish with this Florentine Meatballs recipe from Independence LIVE’s weekly healthy cooking class. Prepared with ground turkey, spinach, and an array of other flavorful ingredients, this delicious recipe is satisfying, filling, and can be ready to eat in less than an hour.

Florentine Meatballs  • Servings: 4

Ingredients:

1 box of frozen spinach, defrosted
1 package of ground turkey breast
1 medium onion, finely chopped
3 cloves of garlic, chopped
1 large egg
¼ cup of milk
¾ cup of bread crumbs
½ cup of grated Italian cheese blend
¼ cup of parsley leaves, chopped

Directions:

  1. Preheat oven to 400 degrees F.
  2. Wring defrosted spinach dry in a kitchen towel.
  3. Place turkey in a bowl, make a well in middle of bowl.
  4. Add spinach, all but 3 tablespoons of onion, garlic, 1 large egg, about ¼ cup milk, bread crumbs, grated cheese, salt and pepper. Mix well.
  5. Form into 12 large balls and drizzle with extra-virgin olive oil. Arrange on a nonstick cookie sheet and roast 20 minutes, or until cooked through.
  6. While meatballs are in the oven, heat a small sauce pot over medium-low heat, add your favorite sauce.
  7. Place three meatballs on dinner plates and top with sauce, garnish with parsley and enjoy!
