There are plenty of ways to cook sweet potatoes, but this recipe is sure to become your new favorite. It’s simple to make, low in fat, and can be cooked in less than an hour.

Maple Roasted Sweet Potatoes – 8 servings

Ingredients:
2.5 lbs. of sweet potatoes, peeled and cut into wedges (leave the skin on for more fiber)
2 tablespoons of olive oil
2-3 tablespoons of 100% pure maple syrup
1 tablespoon of lime
Dash of salt & pepper

Directions:

  1. Preheat oven to 450 degrees F.
  2. Toss sweet potatoes with oil, salt, and pepper on a baking sheet.
  3. Roast potatoes for about 25 minutes. Flip and continue to roast for another 5-8 minutes.
  4. Meanwhile, whisk together maple syrup and lime juice. Drizzle over potatoes and toss. Bake for about 2 more additional minutes.
