Made with oats, black beans, sweet potatoes, peppers, corn and delicious seasonings, these sliders are sure to be a hit at your next BBQ and can be served on salad or a bun.

Smoky Veggie Burger Sliders – 10 servings

Ingredients:
1 cup of old-fashioned oats
1 15.5 ounce can of black beans, rinsed and drained
1.5 lbs. of sweet potatoes, cut into chunks
1 medium red onion, chopped
1 medium red pepper, cored
1 cup of smoked gouda cheese
1 tablespoon of smoked paprika
1 tablespoon of cumin
½ cup of corn
1 tablespoon of garlic powder
2 eggs
1 tablespoon of vegetable oil

Directions:

  1. Cook the sweet potatoes.
  2. Strain and rinse the black beans, then dry with a paper towel.
  3. Cut the sweet potatoes into small cubes and discard the skin.
  4. Chop the onion, pepper and grate cheese.
  5. Grind oats in food processor to the size of bread crumbs.
  6. Add black beans to a large bowl and smash.
  7. Add sweet potatoes, pepper, corn, cheese, spices, oats, and mix together.
  8. Whisk 2 eggs together, add to bowl and mix until combined.
  9. Form patties, heat skillet and add oil.
  10. Cook 5 minutes on each side.
  11. Serve on salad or bun and enjoy!
