There's nothing quite like a BBQ chicken sandwich during the summer months. Now you can enjoy a lighter version with this classic recipe that features a delicious tangy blackberry-infused sauce and is served on whole grain bread. It’s simple and quick to make and is perfect for a delightful and healthy meal.

BBQ Chicken Sandwich — makes 4 servings

Sauce Ingredients:
• ½ a cup of blackberries
• ¼ onion, chopped
• ¼ cup of ketchup
• 2 tablespoons of apple cider vinegar
• 1 tablespoon of honey
• 1 teaspoon of Dijon mustard

Sandwich Ingredients:
• 4 chicken breasts, boneless, skinless, trimmed
• 4 (burger buns) whole grain bread
• Lettuce leaves (optional)
• Sliced tomato (optional)


  1. Blend sauce ingredients for 30 seconds in a food processor. Set aside.
  2. Spray skillet with cooking spray, and set over medium-high heat. Cook chicken 2 to 3 minutes on each side.
  3. Shred chicken into thick pieces with a fork, and return to skillet. Stir in sauce, and cook 1 to 2 minutes more.
  4. Divide chicken among 4 buns, and top with lettuce and tomatoes (if using).
