Celebrate the season with a fresh, vibrant dish that’s as good for you as it looks. This Summer Confetti Salad lives up to its name, bursting with color and packed with crisp, seasonal vegetables. Naturally high in fiber, it supports healthy digestion while delivering a satisfying crunch and bold flavor.

Summer Confetti Salad — makes 4 servings

Ingredients:
• 1.5 cups of cauliflower
• 1.5 cups of broccoli florets
• ¼ cup of a small scallion, finely chopped
• ½ cup of a red bell pepper, chopped
• ½ cup of a yellow bell pepper, chopped
• 1 cup of shredded red cabbage
• 1 cup of canned chickpeas
• ¼ cup of basil leaves

Directions:

  1. Wash all vegetables
  2. Finely chop all vegetables and add to medium bowl

Make Dressing:

  1. Mince fresh ginger with grater
  2. Add all ingredients to a small bowl, whisk until emulsified
  3. Add dressing to salad and mix until combined
