Breakfast is the most important meal of the day, so start your day off right with these healthy flaxseed pancakes. This low-fat recipe is easy to make and contains two tablespoons of ground flaxseed, which can improve digestive health and lower cholesterol.

Flaxseed Pancakes – makes 4 servings

Ingredients:
½ cup of apple sauce
½ cup of milk (almond, coconut, etc.)
1 teaspoon of vanilla extract
1.5 cups of flour (gluten-free, oat, etc.)
1 teaspoon of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
2 tablespoons of ground flaxseed

Directions:

  1. Preheat skillet or griddle with cooking spray or butter.
  2. Mix together wet ingredients in 1 bowl and dry into another. Add wet to dry, stirring thoroughly.
  3. Pour by ¼ cup in skillet and cook 1-2 min per side.
