When it comes to healthy snacking, taste should never take a back seat. These plant-based peanut butter chocolate protein bars prove just that, delivering a rich, satisfying flavor with every bite while packing in a serious boost of nutrition.

Plant-based peanut butter chocolate protein bars

Ingredients:
• 1 cup of powdered peanut butter
• 1/4 cup of all-natural peanut butter
• 5 pitted dates
• 2/3 cup of hemp seeds
• 1/3 cup of chia seeds
• 1/3-1/2 cup of any kind of protein powder
• To taste, carob chips or dark chocolate chips (non-vegan)
• If needed, milk, alternative milk, or water

Directions:

  1. Put powdered peanut butter, all-natural peanut butter, and pitted dates in food processor/blender; pulse a few times to incorporate.
  2. Add hemp seeds, chia seeds, protein powder, dark chocolate chips, and water or milk (if needed). Blend until desired texture.
  3. Line a loaf pan with parchment paper, pour mixture into pan, and flatten with a flat-bottomed object.
  4. Freeze for 10-15 mins, then cut into 12 bars. Refrigerate for 2 weeks, or freeze for up to a month.
