If you love a crispy latke but could do without the carbs in potatoes, you’re going to love this potato-free carrot latke recipe. This dish can be a party appetizer, a side dish or even a main course alongside some fresh greens.
• 2 eggs
• 4 medium carrots
• ¼ cup of chickpea flour
• 1/3 cup of fresh cilantro or parsley
• 1/3 cup of Parmesan cheese
• 1/3 cup of feta cheese
• 3 tablespoons of olive oil
• Optional garlic
• Optional onion, diced
• ½ cup of fat-free plain Greek yogurt
• 4 cups of arugula
