When you're in need of a sweet fix, treat yourself to a serving of Cocoa-Hazelnut “French Toast” with Pear! This indulgent treat will leave you feeling satisfied and takes just minutes to prepare. You can even change out the fruit to suit the season: Chopped mango, fresh raspberries, or blueberries would all work well with this recipe!

Cocoa-Hazelnut “French Toast” with Pear — makes 1 serving

Ingredients:
2 slices of whole grain bread (cut into cubes)
½ cup of chopped Bosc or Comice pears
2 teaspoons of divided maple syrup
1 egg
1/3 cup of non-fat milk
1 tablespoon of unsweetened cocoa powder
¼ teaspoon of vanilla extract
¼ teaspoon of cinnamon
Pinch of kosher salt
1 tablespoon of non-fat Greek yogurt
1 tablespoon of chopped hazelnuts

Directions:

  1. Grease a medium microwave-safe bowl. Add bread and pears and toss together. Drizzle with 1 tsp syrup.
  2. In a small bowl, whisk together egg, milk, cocoa, vanilla, cinnamon, and salt. Pour over bread mixture, and let sit 1 minute.
  3. Cover bowl with a paper towel, and microwave on high until puffed and set, about 2 minutes.
  4. Combine yogurt with remaining syrup and dollop onto cooked “French toast.” Sprinkle with hazelnuts.
