Roasted Chickpea “Nuts” — makes 8 servings

• 1 can of chickpeas (15-ounces), drained and rinsed
• 2 tablespoons of olive oil
• 1-2 teaspoons, seasonings of choice
• Dash of salt & pepper


  1. Preheat oven to 400 degrees F.
  2. Toss chickpeas with olive oil and seasonings.
  3. Spread chickpeas in a single layer on a baking sheet. Sprinkle additional seasonings as necessary.
  4. Bake in the oven for 20-30 minutes, stirring every 10 minutes.
