Enjoy a healthier spin on a classic dessert with this Fudgy Black Bean Brownies recipe from Independence LIVE’s weekly Healthy Cooking Class. These delicious brownies have a great texture and are also a great source of vitamin B, magnesium, and fiber.

Fudgy Black Bean Brownies

16 Servings (2x2 inch brownies)

Ingredients:

1 15.5 oz. can black beans, rinsed and drained
3 large eggs
3 tablespoons canola oil
¾ cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
½ teaspoon baking powder
Pinch of salt
½ cup mini chocolate chips

Directions:

  1. Preheat oven to 350 degrees and lightly grease 8x8 in. pan.
  2. In a food processor, combine black beans, oil and 1 egg and blend until smooth.
  3. Transfer bean mixture to a large bowl and combine remaining ingredients (use ¼ cup choc chips).
  4. Pour batter into 8x8 in. pan, sprinkle with remaining chocolate chips, and bake 32 minutes. Cool completely.
