Sliced raw cucumbers are a go-to healthy snack on a warm day spring day. But if you’re looking for something truly unique to enjoy as the temperatures rise, treat your tastebuds to a refreshing cup of chilled cucumber soup.

Refreshing Chilled Cucumber Soup – serves 5 cups

Ingredients:
• 4 small cucumbers, peeled, seeded, and chopped
• 1.5 cups of Greek yogurt
• 1 shallot, finely chopped
• 1 garlic clove
• 1/3 cup of fresh dill
• ¼ cup of parsley, minced
• 2 tablespoons of dried tarragon
• ¼ cup of olive oil
• ½ a red onion, finely chopped (about ½ a cup)
• A pinch of salt and pepper

Directions:

  1. Peel, wash, seed and chop cucumber, garlic, and shallot.
  2. Add ingredients above to food processor with yogurt, dill, parsley, tarragon, and olive oil.
  3. Blend until smooth, then refrigerate (8 hours to overnight preferable).
  4. Season with salt and pepper as desired and garnish with red onion and a drizzle of olive oil.
