Spring Recipe: Fresh strawberry pie

Strawberries are a springtime staple. 

Not only are they in season and deliciously sweet, but they're also full of vitamin C, which stimulates collagen production.

Local blogger, Baker Bettie, recently shared a tasty way to enjoy the berry with her recipe for fresh strawberry pie.

She suggests beginning with her basic pie dough recipe to make the crust. She also offers a tutorial on how to keep your pie crust from shrinking.

Half of the strawberries will be used to make the filling (instead of using strawberry Jello) while the others will remain cut in halves. 

The filling combines small pieces of strawberries with sugar, cornstarch, a large pinch of salt, lemon zest, and lemon juice. 

Once the filling and leftover berries are in the crust, refrigerate for at least three hours. 

She recommends topping pieces of the pie with sweetened whipped ricotta cheese.

This fresh strawberry pie is 100% a necessity for you this spring and summer. You HAVE to make this! It is incredible. My mouth is watering just thinking about it. I had actually never made a strawberry pie before and I was skeptical about how much I would like it. But holy wow! It was like a dream. One of the best pies I’ve ever tasted! MAKE THIS! You will want to hug and kiss me and squeeze me for commanding you to do so.
