Healthier Sautéed Collard Greens — makes 2 servings

Ingredients:
• 1 bunch (about 16 oz) of collard greens
• 1 tablespoon of olive oil
• 3-4 garlic cloves, minced
• 1 small sweet onion
• ¼ teaspoon of smoked paprika
• 1 teaspoon of Worcestershire sauce
• ¼ teaspoon of nutmeg
• Optional pinch of salt

Directions:

  1. Destem collard greens and chop leaves to desired size. Fill a large bowl with water, place greens in small colander, then submerge colander in bowl. Swish leaves around to clean, then pull out of bowl. Set aside.
  2. Add olive oil to skillet on medium heat, then add minced garlic and sauté for 2-3 minutes. Add onion and paprika, cook down for 4-5 minutes, then add collard greens, Worcestershire, nutmeg, and salt (if desired). Stir until well combined.
  3. Reduce heat to medium-low, cover, and cook for 5 minutes.
  4. Uncover and enjoy!
