Local women launch fundraising campaign for vegetarian food truck

Nicole Beddow and Justine Carmine met during a 200-hour yoga teacher training and the idea for the Happy Hippy Food Truck was born.

Two local women are looking to change the face of food trucks in Philadelphia by opening a vegetarian and vegan-inspired food truck at Temple University.

Nicole Beddow and Justine Carmine launched an Indiegogo fundraising campaign Monday to gain support for their business venture -- the Happy Hippy Food Truck.

Carmine and Beddow, a Temple grad, list several business goals on the campaign site. For example, they plan to incorporate sustainable business practices, such as using the top and sides of the truck as garden space to grow herbs, veggies and spices. 

In addition, they will offer free running, meditation and yoga classes.

"Our truck will be FUN and approachable," the campaign page says. "You will always be able to find us IN the truck following our passions for cooking, fitness, and a life filled with fun. We want to hear about your dreams, encourage you along your journey, swap stories, create lasting relationships, and build a supportive communal network. A Happy Hippy dances, sings, and follows their dreams."

The two have set a goal to raise $20,000 by April 25. The money, according to the page, will go toward purchasing the truck (approximately $15,000), appliances, licenses and permits, signage and more.

Some incentives for people to donate include social media shoutouts, free meals and permanent menu items named after supporters.

The Happy Hippy founders are hosting a fundraising kickoff party Wednesday night, March 18, at the Philly Vegan Drinks meetup from 6 to 10 p.m. at Tattooed Mom. Attendees can enjoy $3 veggie burgers and half-price draft beer. 

Beddow and Carmine met during a 200-hour yoga teacher training in Manayunk, and the idea for the Happy Hippy Food Truck was born. It is scheduled to open this August on Temple's campus.
